Jestli si myslíte, že když si opečete na grilu papriku nebo libové masíčko, prospějete svému zdraví, jste na omylu. Úplně zdravě grilovat nelze. Dokonce lze grilovat velice nezdravě. Můžeme s tím něco dělat? Nebo bude naše letní opékání vždy hazard se zdravím?

Léto bez grilování si neumím představit. A určitě nebudu sama. Češi si grilování zamilovali a své přenosné „vařiče“ rozkládají kde se dá: na zahradě, terase, někdy dokonce na balkoně nebo na střeše. Stala se z toho skoro posedlost. Od čtvrtka naložit maso, nakoupit spoustu pití a pak už se jen sedí, hasí se hořící uhlí, pokládá se maso. A pohoda.

Zatímco si pomlaskáváme a jásáme, jak krásně se nám ten steak propekl, náš žaludek se rozhodně neraduje. Jak to? Vždyť jsme ho nesmažili na oleji, tedy žádný tuk, opečený je pěkně na dřevě, jaký je problém?

Proč nás grilování „zabíjí“

Každé maso v sobě nějaký ten tuk má a při vysoké teplotě se rozkládá. To se samozřejmě děje i na pánvi, jenže na grilu odkapává tuk na rozžhavené uhlí nebo dřevo a uvolňují se z nich karcinogenní látky. Tyto látky (vznikající i při hoření dřeva) jsou teplým vzduchem opět vyneseny na potravinu, kterou kontaminují. Takže například i taková lahůdka, jakou je grilovaná paprika, která v sobě moc tuků nemá, bude rovněž kontaminovaná. Sice méně než třeba mastný karbanátek, ale přece.

Při grilování sice nepřidáváme tuk, jako při smažení, ale přesto maso vybírejte pečlivě. Prorostlé raději neberte. Čím méně tuku na mase, tím méně tuku v ohni. Snažte se jeho množství minimalizovat. Maso z běžného grilu na dřevěné uhlí bývá voňavé a skvěle propečené. Velmi podobného výsledku můžete docílit, pokud použijete například (hliníkové) grilovací tácy. Ani v tomto případě nemůžeme mluvit o zdravém grilování, nicméně tělu rozhodně tolik neškodíme.

Pomůže změna grilu?

Výběrem správného typu grilu, potravin a jejich další úpravě  můžeme udělat z oblíbené pochoutky docela zdravý pokrm. Někdy bohužel za poměrně vysokou daň, tedy že ztratíme typickou vůně dřeva nebo propečenou kůrku.

Vybíráte-li gril s ohledem na zdraví, neptejte se výrobců. Často nám slibují zázraky se zárukou velmi chutných pokrmů. Například maso připravené na vodním grilu nebo na lávových i jiných kamenech nebude nikdy takové, jako to z klasického grilu na dřevěné uhlí. Nicméně chuťové pohárky se jistě rozčilovat nebudou, maso sice chutná trochu jinak, ale je výborné.

  • Tip: Používáte-li nějaký „zdravější“ gril, například plynový, elektrický aj., položte vedle masa namočené třešňové větvičky. Následným odpařováním vody maso dřevem načichne.  

  • Tip: Smíchejte máslo nebo olivový olej s bylinkami a potřete jím lávový kámen. Položte maso. Jeho chuť pak bude velice aromatická.

Velkým hitem zdravého grilování je zmíněný vodní gril, který vypadá spíše jako parní trouba. Mezi zdroj tepla, například hořící dřevo a rošt s pokrmy, je vložena vodní lázeň. Všechen tuk se tedy „utopí“ a žádné jiné nečistoty nestoupají do masa. Vše je přikryté poklicí. Maso se ohřívá ve směsi vodní páry, tepla a dýmu. Vodní gril vlastně trochu simuluje horkovzdušnou troubu. Maso se griluje rovnoměrně a není třeba je otáčet, což je pohodlné. Nicméně přijdete o rituál „pobíhání“ kolem grilu s vidličkou, grilovacími kleštěmi či obracečkou, hašení ohně, když jsou plameny příliš vysoko atd. Vlastně celková doba grilování a zábavy se zkrátí – zkracuje se jak čas roztápění, tak i samotné grilování. Maso z vodního grilu je sice mnohem zdravější, často i šťavnatější, ale rovněž bývá méně křupavé. 

Co grilovat?

Grilovat můžeme v podstatě všechno, ale pokud se bavíme o zdravějším grilování, logicky sáhneme po zdravějších pokrmech.

Ryby

Grilovat můžeme jak sladkovodní, tak po mořské (například treska, losos, makrela atd.). Obojí je velká pochoutka. Při grilování ryb stačí krátká tepelná úprava,  někdy pouhých osm minut.

  • Tip: Losos v chilli marinádě: Dvě lžičky medu rozpustíme v citronové šťávě, přidáme hořčici, chilli, sojovou omáčku a sůl.

  • Tip: Grilované makrely s rajčaty: Vnitřek makrel vyplníme směsí soli, zelené petrželky a plátky rajčete. Zvenku makrelu potřeme grilovacím kořením na ryby.

Drůbeží maso

Nejvíce tuku se schovává pod kůží. Pokud ji ovšem sundáte již před grilováním, maso bude vysušenější. Drůbeží maso musí být dostatečně propečené. Kuře je vynikající v marinádě z olivového oleje, zázvoru, kari koření a kardamomu doplněné ořechy a samozřejmě dochucené solí.

Vepřové maso

Toužíme-li po praseti, koupíme maso z mladých vepřů. Nejlépe libovou kotletu či kýtu. Krkovice a bůček jsou už příliš tučné. Ale zas ta chuť!

Grilujeme zeleninu

Grilovaná zelenina je skvělou přílohou ke grilovanému masu. Samozřejmě syrová bude mnohem zdravější. Nejčastěji se grilují papriky, rajčata, mladé kukuřice. Vynikající je grilovaný lilek s česnekem a bazalkou nebo osolená grilovaná cuketa s bazalkou, tymiánem, mletou paprikou, pepřem a špetkou grilovacího koření.

Grilovaný sýr

Sýr většinou grilujeme v alobalu, protože se roztéká. Nejčastěji grilujeme hermelín.

  • Tip: Celozrnného pečivo rozkrojte a vložte dovnitř více plátků jakéhokoliv sýra (nebo sýr nastrouhejte). Půlky spojte a strany potřete olivovým olejem s bylinkami (rozmarýn, bazalku a tymián). Zabalte do alobalu a vložte na gril.
