IKEA se přidává k firmám, které se snaží snižovat plýtvání jídlem. Testuje i výrobu bioplynu z odpadu. Díky mobilní aplikaci si lidé dokonce mohou koupit přebytky již uvařených jídel, které by jinak skončily v odpadu. Zatím však jen v zahraničí.

IKEA je synonymem nejen pro nábytek ze Švédska, ale i pro řadu oblíbených jídel, například masové kuličky. A tak patří mezi řetězce, jejichž počínání v oblasti (ne)plýtvání jídlem a naplňování strategie udržitelnosti sledujeme. Co nového pro své zákazníky chystá?

V neplýtvání pomáhá i umělá inteligence

Za poslední čtyři roky IKEA snížila plýtvání potravinami o více než polovinu, což představuje zhruba 240 tisíc ušetřených porcí jídla. Jak to dokázala? Za pomoci umělé inteligence (AI) a komplexního školícího programu pro zaměstnance.

Nástroj Winnow Vision AI, který využívá stejný typ technologie, jaký můžeme najít v autech bez řidiče, měří a registruje plýtvání potravinami v restauracích, bistrech a obchodech se švédskými specialitami IKEA po celém světě. Shromážděná data pak umožní zaměstnancům v oblasti potravin více porozumět tomu, co se vyhazuje a proč. A tak jim pomáhají předcházet plýtvání potravinami.

Největší odpad v IKEA? Odřezky ze zeleniny

„Jednu z největších částí našeho potravinového odpadu tvoří odřezky ze zeleniny. Pro představu – v minulém finančním roce jich obchodní domy v našem regionu (Česko, Maďarsko a Slovensko – dohromady osm obchodních domů) vyprodukovaly celkem téměř 3,5 tuny,“ říká pro server Vitalia.cz Rodick Demicoli, vedoucí potravinářského provozu IKEA pro Česko, Slovensko a Maďarsko.

Takový odpad už umí zužitkovat například Obchodní dům IKEA Haarlem v Nizozemsku, který aktuálně testuje anaerobní digesci, v rámci které mění nevyhnutelný potravinový odpad z restaurace a bistra na bioplyn. V rámci testování se také zkoumá, jak lze živiny z potravinového odpadu přeměnit na organické hnojivo používané jako živiny pro pěstování rostlin.

IKEA jde s dobou, podporuje cirkulární hospodářství

Možností, jak šetřit potravinami, je celá řada, například prodávat přebytky.
IKEA v Česku připravuje a podává ve svých čtyřech obchodních domech jídlo téměř devíti milionům lidí ročně. „Naší prioritou je vzniku odpadu předcházet, a když to není stoprocentně možné, hledáme možnosti, jak tento odpad dále využít. Lokálním příkladem jsou sušenky z kávové sedliny, která vzniká v našich kavárnách,“ doplňuje Stuart Cowan, Country Food Manager IKEA Česká republika. Kávovou sedlinu přidává do sušenek ryze česká společnost Zemanka, která tím, stejně jako IKEA, podporuje cirkulární ekonomiku.

IKEA také uzavřela dohodu o spolupráci s autory aplikace proti plýtvání potravinami Too Good to Go, která umožňuje zákazníkům nakupovat zlevněné přebytky potravin (nejen) v obchodních domech IKEA.

Jde o aplikaci do mobilního telefonu, díky níž lze nakupovat neprodané jídlo za skvělou cenu. Zatím lze díky této aplikaci nakupovat z různých obchodů, mimo jiné i z IKEA, ale jen v Belgii, Francii, Itálii, Rakousku, Španělsku, Švédsku, Švýcarsku, Norsku a Velké Británii, nicméně smělé plány jsou i pro Česko. „V současné době zkoumáme, zda a případně jak bychom mohli podobnou službu zprostředkovat i zákazníkům v Česku,“ řekl webu Vitalia.cz mluvčí IKEA Petr Šašek. Kdy by se to mohlo stát, však zatím jasné není.
