Problematické provozovny, v nichž inspekce našla přepálený olej. Místo kontroly: Restaurace Petr Klat, Mariánské Lázně. Olej byl odebrán z fritézy. Olej vykazoval známky tepelného rozkladu – nepříjemný zápach typický pro přepálený olej, nahořklá chuť. V oleji byly přítomny zuhelnatělé zbytky.

Stav olejů ve fritézách veřejného stravování je tristní. Inspekce odhalila přepálené oleje a tuky v každém šestém kontrolovaném zařízení. Budou padat pokuty.

V období od 6. 2. do 17. 11. 2017 se Státní zemědělská a potravinářská inspekce (SZPI) zaměřila na kontroly fritovacích olejů a tuků v provozovnách veřejného stravování. Inspektoři kontrolovali, zda nejsou k přípravě pokrmů používány „přepálené“ oleje a tuky, vykazující známky tepelného rozkladu.V uvedeném období inspekce provedla cílenou kontrolu v celkem sedmdesáti třech provozovnách.

Každý šestý vzorek neprošel

Hodnoceno bylo celkem devadesát jedna vzorků, přičemž hodnocení probíhalo senzoricky na místě (vůně, chuť, barva, konzistence, přítomnost zuhelnatělých zbytků), měřením obsahu polárních částic a následně v laboratoři metodou stanovení obsahu polymerních triacylglycerolů. Každý šestý vzorek byl nevyhovující a bylo tak konstatováno porušení právních předpisů.

„Součástí kontroly bylo i dodržování správné fritovací praxe a hygienických požadavků na fritézy. V několika případech bylo zjištěno znečištění fritézy ztuhlými mastnými nečistotami a znečištění filtrů v digestořích,“ uvedl Radoslav Pospíchal ze SZPI.

Kontrolovaným osobám, u kterých došlo k porušení předpisů, bylo uloženo opatření k odstranění zjištěných nedostatků a bude s nimi zahájeno správní řízení o uložení sankce.

Tomuto typu specifické kontroly se bude SZPI věnovat i v budoucnu.
