Okurka má tak trochu pošramocenou pověst. Mnoho lidí v ní nevidí nic jiného, než jenom spoustu vody bez jakýchkoliv dalších benefitů pro lidské zdraví. Ale to je omyl. Okurky mohou přispět ke zlepšení mnoha procesů v organismu včetně hubnutí a pomáhají také ke zdravé a pružné pleti.

I když většina lidí automaticky zařadí salátovou okurku mezi zeleninu, ve skutečnosti z botanického hlediska jde o ovoce. Náleží k čeledi rostlin tykvovité (Cucurbitaceae), zahrnující také tykve a melouny.

Mezi základní druhy patří okurka polní a okurka salátová, zvaná též hadovka. I když by se na první pohled mohlo zdát, že jde pouze o rostlinu plnou vody bez jakýchkoliv nutričních či zdravotních přínosů pro organismus, opak je pravdou. Okurky při bližším pohledu dokážou pořádně překvapit.

Okurky obsahují zdraví prospěšné látky

Jsou například dobrým zdrojem fytonutrientů, jako jsou flavonoidy, lignany a triterpeny, kterým jsou připisovány mnohé pozitivní účinky na lidský organismus.

Nejbohatší na živiny jsou slupka a semena. Obsahují kromě jiného vlákninu a betakaroten, což je antioxidant podporující zdraví očí a pokožky i imunitu a přisuzují se mu potenciální účinky v boji proti rakovině.

Semena okurek jsou dobrým zdrojem minerálů a obsahují také vápník.

V okurkách není tuk ani cholesterol, zato obsahují až 95 procent vody. Pomáhají tak k dostatečné hydrataci organismu a odstranění odpadních látek z těla.

Co obsahuje okurka?

Jedna syrová neloupaná okurka o váze 300 gramů obsahuje:

  • Kalorie: 45
  • Celkový tuk: 0 gramů
  • Sacharidy: 11 gramů
  • Bílkoviny: 2 gramy
  • Vláknina: 2 gramy
  • Vitamín C: 14 % doporučené denní dávky (DDD)
  • Vitamín K: 62 % DDD
  • Hořčík: 10 % DDD
  • Draslík: 13 % DDD
  • Mangan: 12 % DDD

Vědci jim připisují potenciál v boji proti rakovině

Antioxidanty pomáhají organismu bojovat proti volným radikálům, a tím také proti řadě civilizačních onemocnění včetně rakoviny. V okurkách je jich obsaženo hned několik, kromě vitamínu C a betakarotenu je to také mangan, flavonoidy, triterpeny a lignany.

Zejména lignany jsou spojovány s protirakovinnými účinky. Některé mohou blokovat svým specifickým působením růst a přežití rakovinných buněk, zejména co se týká rakoviny slinivky břišní. Na tomto poli probíhá intenzivní výzkum.

V poslední době se vědci také stále více zajímají o flavonoid fisetin, který studie spojují s ochranou nervových buněk, zlepšením paměti a snížením rizika Alzheimerovy choroby. Slibné výsledky byly zjištěny také při prevenci rakoviny. Okurky jsou kvalitním zdrojem tohoto flavonoidu.

Okurky prospívají trávicímu traktu, hlavně ty kvašené

Tyto chutné plody obsahují vlákninu, která pomáhá regulovat pohyby střev. Zejména pektin může pomoci zvýšit komfort při vyprazdňování. Protože okurky obsahují navíc také velké množství vody, jsou účinné v boji proti zácpě díky zlepšení konzistence stolice.

Pomáhají zhubnout a udržet pružnou pleť

Okurky jsou zdravou a nízkokalorickou potravinou, která je vhodná při redukčních dietách. Studie z roku 2011 prokázala, že větší spotřeba vody koreluje s větším úbytkem hmotnosti u dospělých ve středním a starším věku. Účastníci, kteří před jídlem vypili 0,5 litru vody, zhubli v průměru o 2 kg více než ti, kteří to neudělali. Konzumace okurek, bohatých na vodu, tak může být příjemným způsobem, jak zvýšit příjem tekutin nejenom ve snaze snížit tělesnou hmotnost.

Okurky mají také chladivý a zklidňující účinek, který při lokálním použití snižuje otoky, podráždění a zánět. Plátky okurky tak lze přikládat na oči, pomáhají také při zklidnění pokožky po nadměrném slunění.

Obsah vody hydratuje pleť a díky tomu, že rovněž pomáhá vyplavovat z těla toxiny, přispívá ke zdravé a pružné pleti.
